For most of us, eating healthy is pretty hard.

Most days, a Beyond burger and fries is my favorite meal. Though I’ve learned over time that the payoff of loading my diet with healthy, wholesome foods far outweighs the brief satisfaction of eating highly processed (though delicious) food.

If you shop around to different popular diets such as keto, paleo, and even Atkins, you’ll find one big similarity. That is, all of these plans encourage vegetables as a mainstay in your diet.

Salads in particular seem to be the least appetizing option for working in the rainbow assortment of foods that makes our bodies happy. Instead, finding creative ways that get you excited to eat your vegetables will make you wonder why you ever sat through a dull, veggie-filled meal.

Making a healthy, wholesome meal for yourself is the ultimate act of self-care because it’s what your body needs to function its best.

One of the easiest ways to incorporate more vegetables into your diet is through soups. This particular roasted vegetable soup does call for more prep work (since you’re roasting the veggies first). However, many vegetable soups only require you to chop the vegetables and then toss them into the stockpot. The combination of vegetables and liquid from the broth will make you feel warm and full for hours.

If you’re veggie-averse, or simply struggle to prepare vegetables to your particular liking, soup is a great way to incorporate these nutrient-dense foods in a tasty way. You can start by adding your favorite flavors, or even incorporate more of a specific flavor you like.

Great Blenders for Soups

While preparing healthy, wholesome food doesn’t require any major kitchen appliances, blenders definitely make healthy eating more accessible. You can quickly whip up cashew cream sauces, smoothies that you could charge $10 for, and incredible soups. These tools keep eating healthy fun, interesting, and delicious. It’s amazing to see all of the incredible free recipes (like this one!) that contain healthy, wholesome ingredients served in new and different ways.

However this recipe does require a blender of some type, and I’ve included my favorite affordable options below.


If you make soups with any regularity, an immersion blender is one of the best choices. These blenders make your soups smooth and creamy. If you’re typically short on space, it’s also a great option if you don’t have room to store a large blender. These immersion blenders often come with multiple attachments (as depicted in the photos). As a result, this makes them a good one-stop-shop for anyone looking for multi-purpose kitchen appliances. Plus, these blenders don’t require you to transfer hot liquids as they blend the soup or smoothie right in the container. Below, I added a couple of my top choices for immersion blenders.


My Vitamix will forever be my favorite blender, but the price point can make it a difficult purchase. Standing blenders can blend at a finer consistency than immersion blenders. As a result, they often work better for most recipes that require blending, such as sauces and smoothies. You can also trust that your food is blended in a safe and closed container. This is pretty useful if you’re accident-prone like me. Below I’ve included some blenders I’ve loved and used over the years.
