Some days I just don’t have time to think about and make a meal that I’m actually excited to eat and has a good source of plant based nutrients to fuel the rest of my day,  so smoothies are always my go-to to make sure I’m feeding my body what it needs AND still make it to work on time.  I’m not always in the mood to eat (especially if I have a lot going on), so this light smoothie makes sure I don’t go without and the volume of food will keep my stomach busy digesting all of the delicious fiber and nutrients this smoothie has to offer.

This smoothie is naturally sweetened with apple, banana, and lime, while being balanced with zucchini and spinach to create a light and sweet breakfast (or snack!) that will keep you full for hours.

INGREDIENTS

3 Cups Spinach (raw)

1/2 Apple (I love jazz apples)

1/2 Banana

1/2 Zucchini

Juice from 1/2 a lime

1 Cup Coconut water

1 Cup water

INSTRUCTIONS

  1. Place the liquids and spinach into a high speed blender and blend until you can no longer see large pieces of spinach.
  2. Add in apple, banana, and zucchini one at a time, blend until the consistency is smooth.

This smoothie is packed with greens and gives you your entire daily servings of vitamins A, C, and K! Starting my day off with a super healthy smoothie really sets the tone for the rest of my day and ensures I reach for healthy options. It also gives me the discipline to turn down doughnuts in the office (which is a battle in and of itself).
