I have a bit of a love affair with baked goods, but there comes a time when hot fluffy treats won’t hit the spot. I needed something to make me forget it’s 100 degrees outside. This sorbet is perfect.
While learning how to make sorbet I saw a lot of different ways. Some with an ice cream maker, some without. I’m pretty lazy, so when I saw ice cream maker I visibly rolled my eyes and went on to the next recipe. Who has that kind of luxury? Not this girl.
All you need is a food processor or blender, frozen berries, and sugar and you’re all set. Prep time is next to nothing so this recipe *may* be the easiest one yet!
1 Cup Sugar
6 Cups Frozen Mixed Berries
3/4 Cup Lemon Juice (about 4 lemons)
- In medium saucepan, combine sugar and 1 cup water. Heat on high until sugar dissolves, stirring occasionally. Remove from heat, cover and let stand 15 minutes. Strain syrup into medium bowl. Refrigerate until cold.
- In blender, puree frozen berries, lemon juice and cooled syrup until smooth. Transfer to metal 8-inch square baking pan. Cover with plastic wrap and freeze only until firm enough to scoop (about 2 hours). If sorbet is too hard to scoop, let stand at room temperature until slightly thawed.
