We can all use a little more chocolate in our lives, and why not make that chocolate guilt-free and full of good stuff your body needs? As I’ve started to focus on my diet, chocolate is something I cannot give up, and I don’t want to if I’m being honest. So, I’m really excited to bring you this pudding alternative that is packed with one of the healthiest foods you can incorporate into your diet, chia seeds! They are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium. This recipe is something your tastebuds (and cravings!) will love and so will your body.
2 Cups milk of choice (I used vanilla soy milk)
3 tbsp cocoa powder
6 tbsp chia seeds
2 tbsp cacao nibs
2-3 tbsp sweetener of choice (I used stevia)
7 frozen strawberries
- Place all ingredients into a blender.
- Blend into a smooth consistency. If you like the natural chia seed texture, add the chia seeds to the mixture after blending all other ingredients.
- Place in a container and stick it in the fridge for at least 4 hours.
- When served, slice up some fresh or frozen strawberries for extra natural sweetness.
The really awesome thing about chia seed pudding is that you can customize it into any flavor you want! This recipe also travels well in a mason jar or other container, so it’s a win if you want to pack breakfast for a few days on a trip (with a refrigerator, of course).
