When I first became vegan I didn’t want to give up some of my favorite meat-based foods. It was a challenge but it allowed me to get creative and step out of my comfort zone with foods. I had never seriously given chickpeas a try until I saw a variation of this recipe on Youtube. Now – I can’t get enough! Evan can be pretty particular sometimes but he makes this sandwich regularly because he loves it so much. This sandwich is easy, filling, and actually tastes better than a tuna melt sandwich!
2 Slices Multigrain Bread
1 Slice of vegan cheese or approximately 1/8 cup shredded vegan cheese
1/2 Cup of canned chickpeas
1 1/2 Tbsp Vegan Mayo
1/3 Bell Pepper, finely chopped
1 Tbsp Chives (I used dried, fresh is better!)
Salt & Pepper to taste
- Place multigrain bread in a toaster or oven until lightly browned.
- In a bowl, pour in chickpeas and mash.
- Combine chickpeas, mayo, red bell pepper, chives, salt, & pepper together in bowl.
- Place chickpea mixture on bread with cheese and put back into the oven until cheese is melted.
And done! See? Super easy. The easier the recipe, the faster you get to enjoy it! Now chop up your favorite veggie, grab a glass of lemon water and enjoy this delicious & nutritious sandwich!
